SPICED ORANGE MINCE PIES 🥧 GF, DF + VEGAN OPTION!

Mince pies are definitely one of our favourite Christmas treats and certainly get you in the mood for the holiday season!
Recipe makes 12 mince pies:
INGREDIENTS:
FOR THE FRUIT MINCE:
- 1 green apple, chopped
- 1 cup of raisins
- 1/2 cup goji berries
- 1/2 cup pitted dates, chopped
- Juice + zest of 1 orange
- Ground cinnamon, nutmeg, cardamom, ginger
- 1 tsp of vanilla paste
- 1/3 cup water
- 2 tbsp sweetener (optional)
FOR THE PASTRY:
- 1 cup almond meal
- 3/4 cup buckwheat flour
- 1/2 cup organic coconut flour
- 1 tsp vanilla paste
- 1/4 cup extra virgin olive oil
- 1/4 cup honey, melted or rice malt syrup (vegan option)
- 1/4 cup water to help bind if needed
METHOD:
1. Combine the fruit mince ingredients into a saucepan and simmer on the stove for about 10-15 minutes until soft and cooked
2. Let cool or refrigerate in a container before using (you can make the fruit mince a day before if you want the flavours to soak more)
3. To make the pastry, preheat an oven to 160•C degrees
4. Combine the dry ingredients in a mixing bowl, add the melted honey, olive oil and water then combine until a doughy mixture forms
5. Form pastry into a ball then refrigerate for 5-10 minutes
6. Roll the pastry between two sheets of baking paper until it’s about 1 cm thick
7. Cut 12 circles with a cookie cutter then 12 stars for the top
8. Grease a 12-well muffin baking tin then gently push the pastry circles into each well (avoid breaking the pastry), add 1-2 tbsp of cooled fruit mince to each pie then top with the pastry stars
9. Bake in the oven at 160•C for 20-25 minutes (keep an eye on them to avoid burning!)
10. Let cool before eating (the most difficult step!!)
