Roasted Pumpkin, Chickpea and Pinenut Salad

If you’re looking for a quick Christmas Day salad for lunch then our girl from @seewanteat_ has got you covered!

ROASTED PUMPKIN, CHICKPEA & PINENUT SALAD 🥗
It’s incredibly simple to make and is bursting with fresh flavours and crunch from the toasted Pinenuts 🤩

TO MAKE:
🥗 Dice some pumpkin onto bite sized pieces and roast in the oven until cooked.
🥗 In a pan add a dash of olive oil and a handful of pinenuts on a low heat - toast until crunchy.
🥗 Combine fresh rocket leaves in a bowl with the roasted pumpkin pieces, chickpeas (soaked overnight) fresh coriander and toasted pinenuts in a salad bowl.
TIME SAVER: Feel free to use drained chickpeas from the can ⏰
🥗To serve simply drizzle with balsamic vinegar glaze and garlic olive oil.
